Breakfast sausage
Per pound of ground pork add
1 table spoon rubbed sage
1 tea spoon ground coriander
1 tea spoon garlic powder
1 tea spoon onion powder
1 tea spoon thyme
1 tea spoon salt
1/2 tea spoon mace
1/2 tea spoon dry mustard
1/4 tea spoon ground ginger
Mix thoroughly (I grind corse hand mix and then run it back through on a finer grind setting) and seal in a zip lock bag.
Let sit in refrigerator for 48-72 hours
Eat or freeze
